Brack is a traditional Irish fruit bread with rich dried fruit, sweet and moist, perfect for breakfast or tea time, enjoyed with butter or simply on its own.

Ingredients

  • 1 lb dried mixed fruit
  • 1 cup brown sugar, packed
  • 1 egg
  • 2 cups self-rising flour

Instructions

  1. Soak the dried fruit and brown sugar in 1 cup of cold strong tea overnight.
  2. The next morning, add the self-rising flour and the well-beaten egg to the soaked mixture.
  3. Mix well until combined.
  4. Pour the batter into a well-greased, foil-lined loaf pan.
  5. Bake for 2 hours on the middle shelf at 300°F (150°C).
  6. Take out of the oven and leave in the pan until the next day.
  7. Slice and serve with butter.
  8. Wrap in foil for storage or freeze as desired.
