Braised Fresh Cucumbers

Ingredients

  • 4 cucumbers, pared and thinly sliced
  • 2 tsp. salt
  • 3 bacon slices, diced
  • 1 tsp. sugar
  • 1/4 tsp. non-caloric liquid sweetener
  • 1/8 tsp. pepper
  • 1 Tbsp. cider vinegar

Instructions

  1. Layer sliced cucumbers in a small bowl and sprinkle with salt. Refrigerate, covered, for 30 minutes.
  2. Saute diced bacon in a large skillet until crisp; drain well.
  3. Add the drained cucumbers and remaining ingredients to the skillet.
  4. Stir to mix well.
  5. Cook, covered, over low heat for 10 to 12 minutes.
