Spanish Black Beans

Instructions
- Sort and wash the dried black beans; place them in a large bowl.
- Cover the beans with water 2 inches above them and let soak overnight.
- Saute chopped green peppers, chopped onions, and minced garlic in olive oil until tender.
- Drain the soaked beans; stir in the sautéed vegetables, water, ham hock, and salt.
- Bring the mixture to a boil over medium heat; reduce heat to low and cook uncovered for 1 to 1 1/2 hours or until beans are tender, stirring occasionally.
- Remove the ham hock and bay leaves from the beans; scrape the meat from the bone.
- Add the meat and white wine vinegar to the beans; stir well.
- Serve the beans over cooked rice, optionally topped with shredded Mozzarella cheese and/or sour cream.
