Ingredients

  • 16 oz dried black beans
  • 3 green peppers
  • 2 onions
  • 2 cloves garlic
  • 1/2 cup olive oil
  • 5 cups water
  • 1 lb ham hock
  • 1 to 1 1/2 teaspoons salt
  • 1/4 cup white wine vinegar
  • cooked rice (optional)

Instructions

  1. Sort and wash the dried black beans; place them in a large bowl.
  2. Cover the beans with water 2 inches above them and let soak overnight.
  3. Saute chopped green peppers, chopped onions, and minced garlic in olive oil until tender.
  4. Drain the soaked beans; stir in the sautéed vegetables, water, ham hock, and salt.
  5. Bring the mixture to a boil over medium heat; reduce heat to low and cook uncovered for 1 to 1 1/2 hours or until beans are tender, stirring occasionally.
  6. Remove the ham hock and bay leaves from the beans; scrape the meat from the bone.
  7. Add the meat and white wine vinegar to the beans; stir well.
  8. Serve the beans over cooked rice, optionally topped with shredded Mozzarella cheese and/or sour cream.
