Brandy Sweet Potatoes

Ingredients

  • 3 large sweet potatoes, peeled and cubed
  • 1/2 cup white sugar
  • 3/4 cup packed brown sugar
  • 1/4 cup butter
  • 2 eggs
  • 1/2 cup brandy
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat an oven to 350 degrees F (175 degrees C).
  2. Place the sweet potatoes into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Mash the sweet potatoes in a large bowl, then mix in the white sugar, brown sugar, butter, eggs, brandy, and vanilla extract. Spread potatoes in a 9-inch square baking dish.
  3. Bake until golden brown, 40 to 45 minutes.
