Ingredients

  • 2 to 3 lb. pork shoulder roast
  • 1 1/2 cups black turtle beans
  • 1 small onion
  • water
  • salt
  • pepper

Instructions

  1. Preheat oven to 425°F.
  2. Season the pork shoulder with salt and pepper.
  3. Brown the seasoned pork shoulder in the oven for 30 minutes.
  4. Reduce oven temperature to 325°F.
  5. Add soaked black beans to the roasting pan with enough water to cover the beans.
  6. Season the beans with salt and pepper.
  7. Bake for approximately 2 hours, adding chopped onion, more water, salt, and pepper after the first hour.
  8. Cook until the beans become soft in a soup-like broth.
  9. Slice the roast and serve the beans over hot rice.
