Ingredients

  • 1 lb navy beans
  • shank ham bone with meat
  • 2 cups tomato sauce
  • 2 tablespoons minced parsley
  • 1/2 cup diced potatoes
  • 1/2 cup chopped onion
  • 2 cups diced celery
  • salt to taste

Instructions

  1. Cover navy beans with water and soak overnight.
  2. Drain, rinse, and cover beans with fresh water.
  3. Add the ham bone with meat and simmer until beans are soft.
  4. Skim off excess fat from the soup.
  5. Add tomato sauce, diced potatoes, chopped onion, diced celery, salt, and pepper.
  6. Cook until vegetables are almost soft.
  7. Remove the ham bone and return the picked meat to the soup.
