Ingredients

  • 1 graham cracker pie crust
  • 2 cups low-fat cottage cheese
  • 4 eggs
  • 1 tablespoon vanilla
  • pinch of salt
  • 1 to 2 teaspoons artificial sweetener
  • 1 to 2 teaspoons lemon juice

Instructions

  1. Put cottage cheese, eggs, vanilla, salt, and sweetener in a blender.
  2. Whirl at high speed until smooth and creamy.
  3. Pour the mixture into the graham cracker pie crust.
  4. Bake in a preheated 275°F (135°C) oven for 1 hour.
  5. Turn off the oven and let the cheesecake cool in the oven for 1 hour.
  6. Cover and chill before serving.
