Ingredients

  • 2 c. frozen hash browns (with onion and pepper)
  • 3 Tbsp. margarine
  • 6 eggs

Instructions

  1. In a 10-inch skillet, cook hash browns in margarine until browned, stirring occasionally.
  2. Add beaten eggs to the skillet.
  3. Cook over medium-low heat for 9 to 10 minutes, lifting edges to allow uncooked portion to flow underneath.
  4. Continue until mixture is almost set.
  5. Cover and remove from heat.
  6. Let stand for 3 to 4 minutes.
  7. Cut into wedges and serve.
