Brenda's Taters are flavorful baked potatoes with bacon, chives, and melted cheese, perfect as a hearty side dish or casual comfort food for gatherings.

Ingredients

  • 8 to 10 potatoes
  • 1 lb. plain or jalapeno cheese
  • 1/2 cup chopped chives
  • 1 cup chopped bacon
  • 1 stick margarine or butter

Instructions

  1. Peel potatoes and cut them into strips resembling French fries.
  2. Cover a cookie sheet with heavy-duty aluminum foil.
  3. Spray the foil with Pam or cooking spray.
  4. Spread out the peeled and cut potatoes on the prepared sheet.
  5. Season the potatoes with salt and pepper to taste.
  6. Sprinkle the fried bacon and chopped chives evenly over the potatoes.
  7. Place pats of margarine or butter on top of the potatoes.
  8. Cover the sheet with aluminum foil.
  9. Bake in a 325°F oven for approximately 30 minutes or until tender, or grill while barbecuing.
  10. When cooked, top with sliced cheese of your choice before serving.
