Breton Shortbread Cookies

- Preheat the oven to 160 degrees Celsius.
- With an electric mixer beat the butter, egg yolks and sugar until the mixture is creamy.
- Add the flour, salt and beat again to get a soft dough.
- Refrigerate for 20 min.
- On a floured surface roll out the dough to a thickness of 4 mm and cut out cookies with a cookie cutter.
- Prick the dough with a small knife turned on the back.
- Arrange the shortbread cookies on a baking sheet lined with parchment paper.
- Glaze with a yolk mixed with a little water.
- Wait 5 minutes and glaze again.
- Decorate with a fork and bake for 12 minutes.
- Cookies may be kept 3-4 days in an airtight container.
