Ingredients

  • 2 qt. water
  • 1/2 c. brown sugar
  • 1/2 c. white sugar
  • 3/4 c. salt
  • 1 1/2 Tbsp. garlic powder

Instructions

  1. Combine water, brown sugar, white sugar, salt, and garlic powder in a large container.
  2. Stir until sugars and salt are dissolved.
  3. Submerge fish in the brine and soak for 10 hours or overnight.
  4. Remove fish from brine and proceed to smoke for 8 to 10 hours.
