Broccoli And Garlic Spread

Ingredients

  • 3 Tbsp. extra virgin olive oil
  • 1/4 tsp. crushed red pepper flakes
  • 2 c. broccoli florets
  • 16 to 20 crostini slices
  • 4 cloves garlic, chopped
  • 1 medium potato, peeled and diced (about 1/2 c.)
  • salt to taste
  • chopped pimento for garnish (optional)

Instructions

  1. Combine 2 tablespoons olive oil, garlic and red pepper flakes in a small skillet.
  2. Cook over low heat, stirring, until garlic begins to sizzle.
  3. Remove from heat.
  4. Place a vegetable steamer over 1 inch of water in a medium size saucepan.
  5. Add potato; cover and steam until almost tender, about 5 minutes.
  6. Add broccoli and salt; cover and steam until broccoli and potato are tender, about 5 minutes more.
