Broccoli-Ham Chowder Soup

Ingredients

  • 2 lb. fresh or frozen broccoli
  • 3 c. milk
  • 3 c. chicken stock
  • 1 c. chopped ham
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 1 c. half and half
  • 2 c. grated Swiss cheese

Instructions

  1. Wash broccoli.
  2. Place broccoli and 1/2 stock in large kettle. Bring to a boil, reduce heat and cover.
  3. Simmer 7 minutes or until tender.
  4. Remove broccoli.
  5. Add the remaining stock, milk, salt, cheese and pepper.
  6. Bring to a boil over medium heat.
  7. Stir.
  8. Stir in cream, cheese, butter and broccoli.
  9. Heat until the cheese melts, but do not boil.
  10. To make thick, add 4 to 5 tablespoons cornstarch.
