- Cook frozen chopped broccoli with salt, then drain.
- Melt Velveeta cheese in a double boiler with half a cube of oleo.
- Toss the cooked broccoli with the melted cheese mixture.
- Crush Ritz crackers and mix with the remaining half cube of oleo until coated.
- Grease a 1 1/2-quart casserole dish.
- Layer half of the cracker mixture at the bottom of the dish.
- Add the broccoli and cheese mixture on top.
- Finish with the remaining cracker mixture on top.
- Bake uncovered at 350°F for about 30 minutes or until the top is golden brown.
