Ingredients

  • 3/4 cup margarine
  • 1/3 cup sugar
  • 2 cups flour
  • 3 egg whites
  • 1/4 cup sugar
  • 1 (10 oz.) jar apricot preserves

Instructions

  1. Heat oven to 350°F.
  2. Beat margarine and 1/3 cup sugar until light and fluffy.
  3. Add flour; mix well.
  4. Press onto bottom of ungreased 13 x 9-inch baking pan.
  5. Bake for 20 minutes.
  6. Beat egg whites until foamy.
  7. Gradually add 1/4 cup sugar, beating until stiff peaks form.
  8. Spread apricot preserves over the crust.
  9. Cover with meringue.
  10. Sprinkle with nuts.
  11. Continue baking 20 to 25 minutes, or until lightly browned.
  12. Cut while warm.
