Broccoli With Soy Sauce

Ingredients

  • 1 cup chicken stock or consomme
  • 2 teaspoons cornstarch
  • 1 teaspoon soy sauce
  • 2 pounds broccoli
  • 1/4 cup salad oil

Instructions

  1. Make a sauce by cooking the chicken stock with the cornstarch, which has been rubbed smooth in about 2 tablespoons cold water, until thickened.
  2. Add the soy sauce to the sauce.
  3. Wash the broccoli thoroughly and cut off the flowery tops.
  4. Slice the stems at a slant into pieces about 1/2-inch thick.
  5. Measure the salad oil into a heavy saucepan or skillet.
  6. Add the broccoli stems and cook for about 5 minutes, stirring.
  7. Add the broccoli tops, cut into small pieces, and cook for 5 minutes more.
  8. Pour the thickened sauce over the broccoli.
  9. Cover and cook for 2 minutes.
  10. Remove the cover and cook for an additional 4 minutes.
