Broccoli With Soy Sauce

- Make a sauce by cooking the chicken stock with the cornstarch, which has been rubbed smooth in about 2 tablespoons cold water, until thickened.
- Add the soy sauce to the sauce.
- Wash the broccoli thoroughly and cut off the flowery tops.
- Slice the stems at a slant into pieces about 1/2-inch thick.
- Measure the salad oil into a heavy saucepan or skillet.
- Add the broccoli stems and cook for about 5 minutes, stirring.
- Add the broccoli tops, cut into small pieces, and cook for 5 minutes more.
- Pour the thickened sauce over the broccoli.
- Cover and cook for 2 minutes.
- Remove the cover and cook for an additional 4 minutes.
