Ingredients

  • 1/4 cup melted butter
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 pound smelt
  • 1/2 cup flour

Instructions

  1. Mix melted butter, lemon juice, salt, and pepper in a bowl.
  2. Clean the smelt, splitting them open if they are large.
  3. Dip each smelt in the butter mixture.
  4. Roll each smelt in flour.
  5. Place the coated smelt on a double boiler rack.
  6. Broil for 6 minutes.
  7. Turn each smelt once and broil for an additional minute or until golden.
