Broiled veggies featuring tender eggplant and mushrooms, enhanced with herbs and oil, perfect as a healthy side or vegetarian appetizer for any meal.

Ingredients

  • mushrooms, stems removed
  • eggplant, sliced 1/2 inch thick

Instructions

  1. Preheat broiler to 550°F.
  2. Place eggplant slices on a rack and brush with oil.
  3. Season eggplant with herbs, if desired.
  4. Broil eggplant for 5 minutes.
  5. Turn eggplant slices and brush with oil again.
  6. Broil eggplant for an additional 3 minutes or add a topping of thick sauce and cheese and broil accordingly.
  7. Arrange mushrooms on a rack.
  8. Put olive oil inside each mushroom.
  9. Broil mushrooms for 4 minutes.
