Broiled veggies featuring tender eggplant and mushrooms, enhanced with herbs and oil, perfect as a healthy side or vegetarian appetizer for any meal.

Instructions
- Preheat broiler to 550°F.
- Place eggplant slices on a rack and brush with oil.
- Season eggplant with herbs, if desired.
- Broil eggplant for 5 minutes.
- Turn eggplant slices and brush with oil again.
- Broil eggplant for an additional 3 minutes or add a topping of thick sauce and cheese and broil accordingly.
- Arrange mushrooms on a rack.
- Put olive oil inside each mushroom.
- Broil mushrooms for 4 minutes.
