Ingredients

  • 1 cup bulgar (reconstituted)
  • 2 tablespoons molasses
  • 2 tablespoons honey
  • 1 tablespoon salt
  • 1/4 cup shortening
  • 3 cups whole wheat flour
  • 2 packages dry yeast
  • 2 1/4 cups warm water
  • 1 cup oatmeal
  • 3 to 4 cups enriched all-purpose flour
  • 1 cup cornmeal

Instructions

  1. Mix together bulgar, molasses, honey, salt, shortening, 2 cups whole wheat flour, and dry yeast.
  2. Add warm water and mix thoroughly. Incorporate the remaining cup of whole wheat flour, cornmeal, and oatmeal.
  3. Mix well and add enough flour to make a stiff dough.
  4. Place the dough in a greased bowl, turning to grease the top.
  5. Cover and let rise in a warm place (80° to 85°F), free from drafts, until doubled in size, about 1 hour.
  6. Punch the dough down.
  7. Let the dough rise a second time for about 45 minutes.
  8. Punch the dough down again, divide into halves, and shape into loaves.
  9. Place the loaves in 8 1/2 x 4 1/2 x 2 1/2-inch loaf pans.
  10. Bake at 375°F for 45 to 55 minutes.
