Ingredients

  • 2 egg whites
  • 1 1/2 cups sugar
  • dash of salt
  • 1/3 cup water
  • 2 teaspoons dark corn syrup
  • 2 tablespoons burnt sugar syrup

Instructions

  1. Combine egg whites, sugar, water, and corn syrup in the top of a double boiler.
  2. Heat water to boiling point.
  3. Beat with a beater for about 7 minutes or until mixture thickens and holds shape.
  4. Remove from boiling water.
  5. Add burnt sugar syrup and continue to beat until stiff enough to spread.
