Spanish-style corn bread combines sweet corn, sharp cheese, and green peppers for a flavorful, hearty side perfect for family dinners or casual gatherings.

Ingredients

  • 1 c. yellow corn meal
  • 1 c. sifted all-purpose flour
  • 1 1/2 c. buttermilk
  • 4 eggs
  • 1 (16 oz.) can cream-style corn
  • 1/2 c. shredded sharp cheese
  • 1 finely chopped green pepper
  • 3/4 c. salad oil
  • 1/2 c. finely chopped onion
  • 4 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. salt

Instructions

  1. Mix all ingredients in a large bowl.
  2. Pour the batter into a large greased 10-inch cast-iron skillet.
  3. Bake in a 475°F oven for 20 minutes.
  4. Reduce heat to 375°F.
  5. Bake for an additional 20 minutes or until the bread tests done.
  6. Serve warm.
