Buttercups (Tarts) are sweet cherry-filled treats with a rich almond flavor, perfect for dessert or special occasions, combining fruity tartness with buttery richness.

Ingredients

  • 8 to 10 oz. bottled cherries, drained
  • 1/4 cup butter or margarine
  • 1/4 cup light corn syrup
  • 1 to 1 1/2 tbsp. cornstarch
  • 1 cup sugar
  • 3 eggs, beaten
  • dash of salt
  • 1 tsp. almond extract

Instructions

  1. Quarter the drained cherries.
  2. Add butter, light corn syrup, sugar, salt, and beaten eggs to the top of a double boiler and cook.
  3. Add enough cornstarch to the mixture to thicken it.
  4. Stir in the quartered cherries and almond extract before serving.
