Buttery Southwest Cornbread

Ingredients

  • 1 box jiffy corn bread mix
  • 1/2 cup sour cream
  • 1/2 can creamed corn
  • 1 cup cheddar cheese
  • 1 egg
  • 1 diced jalapenos (optional)
  • 1/4 cup salsa (I used clints salsa, but use whatever kind is your fav)
  • 1/2 stick melted butter

Instructions

  1. Preheat oven to 350
  2. Spray an 8x8 casserole dish with cooking spray
  3. In a bowl combine melted butter, creamed corn, jalapenos if using, and salsa .
  4. Mix well.
  5. Add the egg and combine together.
  6. Mix the jiffy in with the wet ingredients, blend in the cheese, and mix in the sour cream last.
  7. Pour batter into prepared dish.
  8. Bake for 45-55 minutes until brown.
