  • 2 c. cognac
  • 6 lumps sugar
  • rind of 1/2 lemon
  • rind of 1 orange

  2. Peel the orange so that the skin remains in a strip about 1 inch wide and 8 inches long.
  3. Stick cloves into the orange peel.
  4. Hold the orange peel with a fork over the chafing dish.
  5. Pour 2 ounces of cognac over the orange peel, starting from the top, allowing it to drip into the pan.
  6. Ignite the cognac for a few moments, adding just enough additional cognac to keep the flame lit.
  7. When the flame goes out, place the orange peel in the chafing dish and simmer in the hot mixture for 4 to 5 minutes.
  8. Add coffee to the mixture.
  9. Ignite some cognac on top and serve in demitasse cups.
