Calico (Cabbage) Salad

Ingredients

  • 1/2 head green cabbage
  • 1/2 head red cabbage
  • 1 purple onion
  • 2 carrots
  • 1/2 c. fresh lemon juice
  • 1/2 c. olive oil
  • 1 1/2 Tbsp. ginger root or powder
  • 1 Tbsp. sugar
  • salt and pepper to taste

Instructions

  1. Shred cabbage and carrots; slice onion thinly or chop.
  2. Mix dressing in jar and mix well (lemon juice, oil and seasonings). Pour dressing over cabbage mixture.
