Ingredients

  • 6 large unpeeled cucumbers
  • 6 carrots, scraped
  • 1 1/2 tsp. mustard seed
  • 2 1/2 c. sugar
  • 1 1/2 c. vinegar
  • 1 1/2 tsp. celery seed
  • 2 onions

Instructions

  1. Coarsely grind cucumbers, carrots and onions; stir in salt. Let stand 3 hours; drain well.
  2. Combine remaining ingredients and bring to boil.
  3. Add drained vegetables and simmer for 30 minutes uncovered.
  4. Put in pint jars and seal.
  5. This is real good in potato salad or tuna salad as well as just eating as a relish or with hot dogs.
