Cambray Potatoes
Ingredients
- olive oil ⓘ
- 1 red onion, thinly julianne sliced
- 1/2 cup green bell pepper, julianne sliced ⓘ
- 1 cup red bell pepper, julianne sliced ⓘ
- 1/2 cup yellow bell pepper, julianne sliced ⓘ
- 1/2 cup cilantro, finely chopped ⓘ
- 1 1/2 lbs cambray potatoes or 1 1/2 lbs red potatoes ⓘ
- 1 tablespoon paprika ⓘ
- 2 garlic cloves, finely sliced ⓘ
- salt, to taste ⓘ
Instructions
- Boil potatoes in enough water with salt.
- Drain.
- In large skillet add olive oil, potatoes, onions, green bell peppers, red bell peppers, yellow bell peppers, cloves, paprika and salt to taste.
- Let simmer a few minutes, while turning occassionally.
- Remove from heat.
- Serve in large serving bowl and decorate with the cilantro.
