Ingredients

  • 4 cups peeled, diced potatoes
  • 1 large onion
  • 1 large bell pepper
  • 2 Tbsp oil
  • salt and pepper to taste
  • garlic powder to taste

Instructions

  1. Put oil into a heavy skillet over medium heat; add diced potatoes, chopped onion, and chopped bell pepper.
  2. Stir the vegetables, cover tightly, and simmer until tender.
  3. Remove the lid and evaporate any excess liquid.
  4. Cook and toss until the bottom is lightly browned and crusty.
