Ingredients

  • 6 medium sweet potatoes
  • 1 cup light brown sugar
  • 1 teaspoon salt
  • 1/4 cup oleo or butter
  • 1/4 cup water

Instructions

  1. Parboil the sweet potatoes for 15 minutes, then peel and cut in half lengthwise. Place in a baking dish.
  2. Combine light brown sugar, salt, oleo or butter, and water. Boil for 3 minutes to make the syrup.
  3. Pour the syrup over the potatoes in the baking dish.
  4. Bake at 350°F (175°C) for 1 to 1 1/4 hours until the potatoes are tender and coated with the caramelized syrup.
