Cannellini Bean Dip

Ingredients

  • 2 tablespoons olive oil
  • 1/2 cup red onion, finely chopped
  • 2 teaspoons minced garlic
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 (15 ounce) can cannellini beans, drained and rinsed
  • 1 teaspoon chili powder
  • 1/4 cup water
  • 1/4 cup fresh cilantro or 1/4 cup parsley, finely chopped

Instructions

  1. In skillet, heat oil. Add red onion and garlic and saute. Season with salt and pepper.
  2. Add onion mixture to food processor. Add remaining ingredients, except cilantro or parsley, pulse until slightly chunky.
  3. Stir in cilantro or parsley. Serve with vegetables.
