- In skillet, heat oil. Add red onion and garlic and saute. Season with salt and pepper.
- Add onion mixture to food processor. Add remaining ingredients, except cilantro or parsley, pulse until slightly chunky.
- Stir in cilantro or parsley. Serve with vegetables.
