- Heat the syrup-water mixture to boiling.
- Pour the hot mixture over the lemon jello and stir until dissolved.
- Cool the gelatin mixture to lukewarm.
- Stir in the evaporated milk and pineapple.
- Chill until the mixture reaches the consistency of unbeaten egg whites.
- Spoon the gelatin mixture into the cantaloupe cavities, filling them.
- Chill the filled cantaloupes in an upright position for at least 3 hours or until firm.
- Slice into 1-inch rings and serve.
