Ingredients

  • 2 medium cantaloupe
  • 1 (8 1/2 oz.) can crushed pineapple in syrup
  • water
  • 1 (3 oz.) package lemon jello
  • 2/3 cup evaporated milk

Instructions

  1. Cut about 1 1/2 inches from the tops of the cantaloupes.
  2. Scoop out the seeds from each melon cavity and wipe with paper towels.
  3. Drain the pineapple, reserving the syrup, and add water to measure 1 1/4 cups.
  4. Heat the syrup-water mixture to boiling.
  5. Pour the hot mixture over the lemon jello and stir until dissolved.
  6. Cool the gelatin mixture to lukewarm.
  7. Stir in the evaporated milk and pineapple.
  8. Chill until the mixture reaches the consistency of unbeaten egg whites.
  9. Spoon the gelatin mixture into the cantaloupe cavities, filling them.
  10. Chill the filled cantaloupes in an upright position for at least 3 hours or until firm.
  11. Slice into 1-inch rings and serve.
