Cantonese Rice

Ingredients

  • 1 1/3 cups rice Thai
  • 2 eggs lightly beaten with a fork
  • 2 slices ham diced, or a tray of diced ham
  • 1 can peas
  • 1 green onion with stem
  • peanut oil
  • 1 tablespoon dried shrimp optional, but adds lots of flavor

Instructions

  1. Cook the rice (if possible in a rice cooker), let cool.
  2. In a wok, cook the eggs (omelette style) with a dash of oil. Once cooked, remove from wok and cut into thin strips. Finely chop the onion and fry only the white bits in the wok. Also chop the onion's green stem and set aside. Then add the rice, ham, shrimp, and peas. Brown, while stirring regularly until the rice is hot.
  3. Before serving, add the omelette strips, and sprinkle with chopped green onions. Serve with black soy sauce (optional).
