Ingredients

  • 250 g Freshly boiled or roasted sweetcorn kernels
  • 250 g Diced capsicum (mixed red, yellow and green)
  • 1 Large onion diced
  • 1 Medium chilli finely chopped
  • 1 Bunch fresh coriander chopped
  • 1 Medium lemon juiced
  • 50 ml Olive oil
  • 1 Teaspoon coarse salt
  • 1/4 Teaspoon ground black pepper

Instructions

  1. Mix all above ingredients in bowl, toss, eat!
