Ingredients

  • 1 cup Diamond walnuts
  • 1/4 cup butter
  • 1 cup brown sugar, packed
  • 1 cup granulated sugar
  • 1/4 teaspoon salt
  • 3/4 cup dairy sour cream
  • 1 teaspoon vanilla

Instructions

  1. Chop 1/2 cup of the walnuts into medium-sized pieces.
  2. Chop the remaining walnuts into fine pieces for coating the fudge balls.
  3. Melt butter in a heavy 2-quart saucepan.
  4. Add brown sugar, granulated sugar, salt, and sour cream to the melted butter.
  5. Cook over low heat, stirring until the sugars dissolve. Cover and boil slowly for 5 minutes.
  6. Uncover and cook rapidly without stirring until the mixture reaches 236° (soft ball stage).
  7. Remove from heat and cool to lukewarm.
  8. Add vanilla and beat until the mixture is creamy and begins to hold its shape.
  9. Stir in the medium-sized walnut pieces.
  10. Drop rounded teaspoonfuls onto waxed paper.
  11. Quickly shape into balls and roll in the finely chopped walnuts.
  12. Let stand until the fudge balls are firm.
