Ingredients

  • 3 cups finely chopped dry roasted peanuts
  • 1 (14 oz.) can Eagle Brand sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/2 pound chocolate confectioners coating

Instructions

  1. In a heavy saucepan, combine the chopped peanuts, sweetened condensed milk, and vanilla extract.
  2. Cook and stir over medium heat for 8 to 10 minutes or until the mixture forms a ball around the spoon and pulls away from the side of the pan.
  3. Cool the mixture for 10 minutes, or chill if desired.
  4. Shape the mixture into 1-inch balls.
  5. In a small heavy saucepan, melt the chocolate confectioners coating over low heat.
  6. Using a wooden pick, dip each peanut ball into the melted coating, covering half of the ball.
  7. Place the coated balls on wax paper-lined baking sheets until the coating is firm.
  8. Store the caramel peanut balls at room temperature or in the refrigerator.
