- In a heavy saucepan, combine the chopped peanuts, sweetened condensed milk, and vanilla extract.
- Cook and stir over medium heat for 8 to 10 minutes or until the mixture forms a ball around the spoon and pulls away from the side of the pan.
- Cool the mixture for 10 minutes, or chill if desired.
- Shape the mixture into 1-inch balls.
- In a small heavy saucepan, melt the chocolate confectioners coating over low heat.
- Using a wooden pick, dip each peanut ball into the melted coating, covering half of the ball.
- Place the coated balls on wax paper-lined baking sheets until the coating is firm.
- Store the caramel peanut balls at room temperature or in the refrigerator.
