Ingredients

  • 10 mandarins
  • 1/2 cup mandarin juice
  • 2 tablespoons mandarin peel in syrup
  • 1 cup sugar
  • 1/2 cup water

Instructions

  1. Peel mandarins, removing the white membrane from the fruit.
  2. Place the peeled mandarins in a 2-inch baking dish.
  3. Combine sugar, water, mandarin juice, and mandarin peel in syrup in a saucepan.
  4. Cook over medium heat until the sugar dissolves and the mixture thickens slightly to make caramel.
  5. Pour the caramel over the mandarins in the baking dish.
  6. Bake in a preheated oven at 350°F (175°C) for about 30 minutes, basting occasionally.
  7. Serve warm or chilled, drizzled with the caramel sauce.
