Ingredients

  • 2 cups light cream
  • 1/2 cup sugar
  • 1 tablespoon molasses
  • 6 egg yolks
  • 1 1/2 ounces dark rum
  • 1/8 teaspoon orange extract

Instructions

  1. Scald the cream, sugar, and molasses, then cool to lukewarm.
  2. Whip the egg yolks, dark rum, and orange extract together until thick and lemony in color.
  3. Add the warm cream mixture to the whipped egg mixture and blend well.
  4. Pour the custard into ramekins.
  5. Cover each ramekin with foil.
  6. Place the ramekins in baking pans and fill the pans halfway with water.
  7. Bake at 325°F for about 25 minutes or until the custards test done.
  8. Serve and enjoy with a shot of espresso.
