Carrot Tsimmis

Ingredients

  • 10 to 12 large carrots, cut into large chunks
  • 2 medium potatoes, peeled and cubed
  • 3 yams, peeled and cubed
  • 1 medium onion, diced
  • 10 large prunes, pitted and cut in half
  • 1 clove garlic, crushed
  • 1/2 c. brown sugar
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 2 c. orange juice

Instructions

  1. Place all ingredients into large saucepan.
  2. Bring to a boil, then reduce heat.
  3. Simmer over low heat for 1 hour, stirring occasionally.
  4. If mixture starts to become dry, add 1/2 cup of water at a time.
  5. Cook until carrots are very soft but not mushy.
