- Cook carrots, covered in water, until tender; drain.
- Turn carrots into a 1-quart baking dish.
- Stir in raisins, oleo, honey, lemon juice and ginger.
- Bake, uncovered, in preheated oven at 375° for 35 minutes.
- Take out of oven and sprinkle with almonds.
