Ingredients

  • 1 lb. carrots, thinly sliced
  • 1/4 c. golden raisins
  • 1/4 c. oleo
  • 3 Tbsp. honey
  • 1 Tbsp. lemon juice
  • 1/4 tsp. ginger
  • 1/4 c. sliced, unpeeled almonds

Instructions

  1. Cook carrots, covered in water, until tender; drain.
  2. Turn carrots into a 1-quart baking dish.
  3. Stir in raisins, oleo, honey, lemon juice and ginger.
  4. Bake, uncovered, in preheated oven at 375° for 35 minutes.
  5. Take out of oven and sprinkle with almonds.
