Ingredients

  • 2 Tbsp. olive oil
  • 2 lb. carrots, peeled and sliced diagonally into 2-inch pieces
  • 1 head garlic, cloves peeled and halved
  • salt to taste
  • 1 can black olives, cut in half

Instructions

  1. In a large skillet, heat olive oil over moderately high heat.
  2. Add peeled and sliced carrots, stir to coat with oil, and reduce heat to moderate.
  3. Add garlic cloves, cover the skillet, and braise for 20 minutes, stirring regularly.
  4. Stir in halved black olives before serving.
