  3. Chop green onions and fresh mint.
  4. Dice tomatoes small.
  5. Combine parsley, soaked bulgur, green onions, mint, tomatoes, salt, and pepper in a large bowl.
  6. Add lemon juice and olive oil, then toss to combine and serve.
