Ingredients

  • 2 cups sugar
  • 1 cup water
  • 1/4 teaspoon cream of tartar
  • 2 cups toasted cashew nuts
  • 1 teaspoon vanilla

Instructions

  1. In a 1 1/2-quart saucepan, combine sugar, water, and cream of tartar.
  2. Cook and stir until sugar dissolves.
  3. Bring to boiling point, boil until syrup reaches hard crack stage of 300°.
  4. Remove from heat; stir in cashews and vanilla.
  5. Set pan in a larger pan of hot water to keep soft.
  6. Drop by tablespoon onto greased baking sheet or wax paper to form clusters.
