Ingredients

  • 10 new potatoes
  • 1 cup mayonnaise
  • 1/2 cup chopped onion
  • 1 cup shredded Cheddar cheese
  • 1 pound bacon

Instructions

  1. Cut new potatoes into bite-sized chunks and boil until tender.
  2. Cook and crumble bacon.
  3. Mix shredded Cheddar cheese, chopped onion, mayonnaise, and crumbled bacon.
  4. Layer the boiled potatoes in a 9 x 13-inch pan.
  5. Pour the cheese and bacon mixture over the potatoes.
  6. Spread the mixture evenly over the potatoes.
  7. Bake for 30 minutes at 325°F (163°C).
