Ingredients

  • 1 (9-inch) pastry shell
  • 4 slices bacon
  • 2 Tbsp. chopped onion
  • 1 c. shredded Swiss cheese
  • 3 beaten eggs
  • 1 1/2 c. milk
  • 1 c. mashed, cooked winter squash
  • 1/2 tsp. salt
  • 1/8 tsp. ground nutmeg
  • 1/8 tsp. pepper

Instructions

  1. Bake the pastry shell and keep it warm.
  2. In a small skillet, cook the bacon until crisp.
  3. Drain bacon on paper towels and finely crumble.
  4. Reserve 1 tablespoon of bacon drippings.
  5. Cook the chopped onion in the bacon drippings until tender.
  6. Sprinkle the shredded Swiss cheese, crumbled bacon, and cooked onion into the warm pastry shell.
  7. In a bowl, combine the beaten eggs, milk, mashed winter squash, salt, nutmeg, and pepper.
  8. Pour the egg mixture into the pastry shell.
  9. Bake in a 325°F oven for 40 to 50 minutes or until a knife inserted near the center comes out clean.
  10. Let stand for 10 minutes before serving.
