Ingredients

  • 8 catfish fillets
  • 16 Tbsp. thick and chunky salsa
  • 1 large Vidalia onion, cut in rings
  • 1 large bell pepper, cut in rings

Instructions

  1. Salt and pepper the catfish fillets.
  2. Top each fillet with 2 tablespoons of salsa, a ring of bell pepper, and a ring of onion.
  3. Wrap each fillet in heavy-duty tinfoil, lightly spraying the foil with Pam.
  4. Place the wrapped fillets on a hot charcoal grill.
  5. Cook for 30 to 50 minutes, depending on grill heat, until fish is cooked through.
