Cathy's Coconut Mousse is a light, fluffy dessert with rich coconut flavor, perfect for coconut lovers and suitable for special occasions or refreshing summer treats.

Ingredients

  • 2 egg whites
  • 2 cups whipping cream
  • 1 cup sugar
  • dash of salt
  • 1/8 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 2 cups flaked coconut

Instructions

  1. Beat egg whites, whipping cream, sugar, salt, almond extract, and vanilla extract until thick and creamy.
  2. Fold in the flaked coconut.
  3. Spoon the mixture into cupcake liners in a muffin (cupcake) pan.
  4. Top with half of maraschino cherries if desired.
  5. Freeze for at least 3 hours until firm.
  6. Keep frozen until ready to serve.
