Ingredients

  • 3 to 4 lb. potatoes
  • butter
  • salt
  • pepper
  • 1 bunch scallions

Instructions

  1. Peel and chop the potatoes into evenly sized pieces.
  2. Place potatoes in a large pot and cover with cold water.
  3. Bring to a boil and cook until the potatoes are tender, about 20-25 minutes.
  4. Drain the potatoes and return them to the pot.
  5. Add butter, salt, and pepper to taste, then mash until smooth.
  6. Chop the scallions finely and stir them into the mashed potatoes.
  7. Gradually add milk until the desired creamy consistency is reached.
  8. Serve hot as a side dish.
