Chalumpas are hearty, slow-cooked pork and bean tacos with smoky chili flavors, perfect for comforting gatherings or casual family dinners with toppings like lettuce and cheese.

Ingredients

  • 3 lb. pork roast
  • 2 cloves garlic, crushed
  • 2 tsp. cumin
  • 1 small can whole green chilies, washed seeds out
  • 1 lb. pinto beans
  • 2 Tbsp. chili powder
  • 1 tsp. oregano
  • 1 Tbsp. salt

Instructions

  1. Put all ingredients in a crock-pot (slow cooker).
  2. Cover with water.
  3. Cook over low heat for 12 hours.
  4. Remove bones and break up the roast meat.
  5. Cook for another 12 hours.
  6. Serve over Fritos with lettuce, tomatoes, cheese, olives, sour cream, and salsa.
