Ingredients

  • 5 to 8 lb. pork loin, cubed 1/2 to 3/4 inch
  • 1 (8 oz.) can tomato sauce
  • 4 cans chopped green chile peppers (mild)
  • 3 bell peppers, chopped
  • 2 large onions, chopped
  • 2 large cans whole tomatoes, drained and chopped
  • 2 Tbsp. salt
  • 1 tsp. black pepper
  • 1/2 stick butter
  • 1 small box Minute rice

Instructions

  1. Have the butcher cube the pork as small as possible, then chop some pieces further if needed.
  2. In a large pot, melt the butter over medium heat.
  3. Add chopped onions and cook until translucent.
  4. Stir in chopped bell peppers and cook for a few minutes.
  5. Add the cubed pork to the pot and brown on all sides.
  6. Pour in the tomato sauce and chopped whole tomatoes.
  7. Add the green chile peppers, salt, and black pepper.
  8. Reduce heat, cover, and simmer for about 1 to 2 hours until the pork is tender.
  9. Prepare Minute rice according to package instructions.
  10. Serve the stew hot over cooked rice.
