Ingredients

  • 3 c. sugar
  • 2 c. pink champagne
  • 1 (3 oz.) pkg. liquid pectin

Instructions

  1. Combine sugar and pink champagne in a large Dutch oven.
  2. Cook over medium heat, stirring until sugar dissolves (do not boil).
  3. Remove from heat; stir in liquid pectin.
  4. Skim off foam with a metal spoon.
  5. Quickly pour hot jelly into hot sterilized jars, leaving 1/4 inch of headspace; wipe jar rims.
  6. Cover jars at once with metal lids and bands.
  7. Process in boiling water bath for 5 minutes.
  8. Let stand for 8 hours before serving.
